It's Tuesday evening. Lenny is gone to Wyoming on his Harley to visit friends. It's been a dream of his. To take a Harley trip and become one with the road.
That leaves me here, hangin' out with Missy the cat and Daisy the dog. Hangin' out and makin' Spring Vegetable Risotto With Shrimp for my supper. Sounds good, huh? It's a new recipe for me. I try new recipes when the Len-Man is gone. He prefers the tried and true and meat and potatoes. So when he's gone I experiment with different recipes. More vegetables, less meat. More "scratch", less processed. I gradually introduce them to him and he's in love with my meals! He refers to my cooking as "gourmet"! It's really just a notch above traditional farm wife meals, with a flair and a kick. (Cayenne pepper, anyone?)
My recipe turned out great! An ingredient new to me was Arborio rice (short-grain Italian rice). I think I cooked it a tad too long as it was a bit mushy, but not enough to ruin the dish. This is one I'll definitely serve up to Lenny, since it could be considered a fancy hotdish. If you'd like the recipe, e-mail me at pambrewer@live.com.
